Irish Soda Bread
1 cup white flour
2 cups whole wheat flour
1/2 cup brown sugar or 1/4 cup Splenda sweetener
1/2 tsp. cinnamon (optional)
1/2 tsp. salt
1 1/2 tsp. baking soda
2 cups buttermilk or 2 cups milk + 2 tbsp. lemon juice
butter
Combine first five ingredients in a bowl. Combine baking soda
and buttermilk in a cup. Make a crater in center of flour
mixture. Combine buttermilk and baking soda mixture. Pour in
the crater and mix into a dough. Pour into 2 greased bread pans.
Bake at 350 degrees for 40-45 minutes. 10 minutes before removing
from oven, brush bread with melted butter.
