Arizona Date Cake

Arizona Date Cake

1 cup sugar
1/2 cup margarine
1 tbsp. grated orange rind
2 eggs
2 cups sifted flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 cup buttermilk
1 cup pitted dates ground
1 tsp. lemon extract

Citrus Sauce

1/4 cup orange juice 1/4 cup lemon juice 1/2 cup sugar Cream sugar, margarine and grated orange rind. Add eggs and beat well. Sift dry ingredients together twice. Add to buttermilk and mix. Fold in ground dates and lemon extract. Dust pan lightly with flour. Pour batter in and bake 40 to 45 minutes at 350 degrees. While baking combine citrus sauce. Heat together orange juice, lemon juice and sugar. Stir until sugar is dissolved. Allow cake to remain in baking pan for 5 minutes, after removing from oven. Turn out on large plate and spoon sauce over cake. Serve.
