Scrambled Eggs and Asparagus
1 lb. asparagus washed
1/4 cup olive oil
1/2 cup onion finely diced
1 clove garlic minced
1/4 tsp. salt
1/8 tsp. pepper
2 eggs beaten
1/2 cup cheese shredded
Chop asparagus in one inch pieces. In a saucepan, add oil,
asparagus, onion, garlic, salt and pepper. Cook covered until
asparagus is tender. Combine eggs and cheese. Add to asparagus
mixture. Stir until consistency of scrambled eggs and cooked.
