Cherry Pecan Log

Cherry Pecan Log

5 tbsp. evaporated milk
1 cup candied cherries coarsely chopped
3 1/2 cups powdered sugar sifted
14 (1/4 lb.) caramels
1 1/2 cups pecans coarsely chopped
Combine 2 tbsp. of evaporated milk, and cherries in mixing bowl.
Gradually stir in sugar until blended. Knead with hands until
smooth and shiny, not sticky. Shape into two 6 inch logs, roll
in wax paper and chill until firm. Combine caramels and remaining
3 tbsp. of milk. Heat over boiling water until melted, stirring
occasionally. Turn caramel mixture into pie pan. Quickly roll
logs in caramel mixture, then in pecans. Reshape logs. Roll
in waxed paper and chill until firm. Slice log each into 10
pieces. Makes 1 1/2 pounds.
