Caterer's Fajita Tacos
1 tbsp. olive oil
1/2 cup onion chopped
1/2 cup green pepper chopped
1 clove garlic minced
a good sprinkle fajita seasoning
1/2 cup ground beef
sprinkle fajita seasoning
dash salt and pepper
4 taco shells
1/2 cup refried beans
shredded lettuce
shredded cheddar cheese
chopped tomato
hot sauce
Saute onion, green pepper and garlic in olive oil in a
hot skillet for 3 minutes. Stir in fajita seasoning. Add
ground beef and cook until brown. Season with salt and
pepper. Heat beans in microwave or over stovetop. Spread
refried beans in taco shells. Add meat mixture. Add
lettuce, cheese, tomatoes and hot sauce. Makes 4 tacos.
Recipe can be doubled.
