Chicken Tamale Pie
1/2 cup onion chopped
1/2 cup celery sliced
1 clove garlic minced
3 tbsp. oil
1 1/2 cups cooked chicken diced
1-8 oz. can tomato sauce
1-2 1/4 oz. can olives chopped
2 1/2 cups chicken broth
1/2 tsp. salt
2 tsp. chili powder
1 cup corn meal
1 cup cold water
In pan, lightly cook onion, celery and garlic in 2 tbsp. oil.
Add chicken, tomato sauce, olives, 1/2 cup chicken broth, 1/4
tsp. salt and chili powder. Bring remaining broth to a boil.
Add remaining salt and oil. Combine cornmeal and water, and
slowly add to boiling broth. Over low heat, cook, stirring
constantly until mixture is thick. Pour half of mixture into
greased 2 quart casserole dish. Pour chicken mixture over this.
Top with remaining cornmeal mixture. Bake at 350 degrees for 45
minutes.
