Chiles Rellenos
1/2 cup cheddar cheese grated
4 oz. low-fat cream cheese
1/2 tsp. garlic powder
8-10 fresh roasted whole green chiles
1 box pancake mix
cooking oil
In a bowl, combine cheddar cheese, cream cheese and garlic powder.
Prepare pancake mix. Stuff each green chile with the cheese mixture.
Press each chile with hands to close. Dip each chile in the pancake
mix to fully coat. Heat oil in a frying pan. Place chiles in the
hot oil and fry until golden brown on both sides. Drain on paper
towels. Great served in a tortilla.
