Enchilada Pie
1 lb. ground beef
1 onion chopped
2 cloves garlic chopped
2 tbsp. oil
1-10 oz. enchilada sauce
1-8 oz. tomato sauce
1-4 1/2 oz. can olives chopped
1/2 tsp. salt
dash cayenne
8 corn shells
8 oz. monterrrey jack cheese grated
Cook onions and garlic in oil. Add meat and brown. Add sauces,
salt, cayenne pepper and olives. Grease a casserole dish. Put 3
corn shells in dish, then meat mixture, then cheese. Repeat
layers, topping with cheese. Bake 30 minutes in 350 degree oven.
