Flour Tortillas

Flour Tortillas

2 1/2 cups flour
1/2 tsp. salt
1 1/2 tsp. baking powder
3/4 cup warm water
2 1/2 tsp. shortening, margarine or oil
Mix first three ingredients. Add shortening and mix with hands until 
lumpy. Slowly add water until well mixed. It will feel like bread 
dough. Cover and let it sit about 10 minutes. Separate into 12 balls. 
Put each ball in flour and roll out with a wooden rolling pin, about 
6-8 inches long and the size of a broom handle. Fry the tortilla at 
high heat until light brown and then turn over. You can also use for 
burros and enchiladas.
