Mexican Corn

Mexican Corn

2-15 oz. cans corn drained
1-4 oz. can green chiles diced
2 tbsp. red pepper finely chopped 
2 tbsp. red onion finely chopped 
3 tbsp. butter
6 oz. cheddar cheese shredded
Combine ingredients, except butter and cheese in a bowl. Place half of 
mixture in a buttered baking dish. Dot mixture with half of butter and   
cheese. Add remaining corn mixture and top with remaining butter and 
cheese. Bake in a 350 degree oven for 20-30 minutes until cheese is 
melted and bubbly.
